Born as a mutation of Pinot Noir, the Pinot Grigio grape has very ancient origins since there are traces of its cultivation as early as ancient Roman times. In Italy it spread around the beginning of the 19th century, finding particularly favourable conditions in Friuli-Venezia Giulia. After harvesting and destemming, short maceration takes place in a press for 4-6 hours. The must obtained after soft pressing is clarified through decantation and thus leads to alcoholic fermentation at a controlled temperature in steel. The final phase of 3-4 months takes place in steel for 3-4 months with frequent handling.
Features of this Pinot Grigio
It has a coppery color with olfactory notes reminiscent of bread crust and acacia flowers. On the palate it is endowed with great structure.

excellent for accompanying fish-based dishes or white meats. Serve at a temperature of 10-12°C
