Rocca di Frassinello San Germano is one of the most representative wines of the Rocca di Frassinello estate, the expression of an Italian-French project born in Maremma Tuscany. It is a large red “grand cru” obtained from a blend of Cabernet Sauvignon, Merlot and a small part of Sangioveto, coming from a single vineyard located on the hill of San Germano, an area with a strong historical vocation for viticulture already in Etruscan times. The grapes are vinified in steel at a controlled temperature and subjected to a long maceration, then aged for approximately 24 months in barriques, mostly new, followed by a further period of aging in the bottle.
Characteristics of this Tuscan wine
From an organoleptic point of view it has a very intense, almost impenetrable ruby red colour. On the nose it is broad and complex, with clear notes of ripe berries such as blackberry and currant, enriched with hints of coffee, vanilla and sweet spices resulting from aging in wood. In the mouth it is a wine of great structure, powerful but at the same time balanced, thanks to the freshness brought by Sangioveto which lightens its richer and more tannic component. The sip is deep, harmonious and characterized by a long aromatic persistence.
Recommended pairings with this red wine
In pairings it requires important and structured dishes, capable of withstanding its intensity. It pairs very well with red meats, roasts and game, but also with braised meats and slow, tasty preparations. Also excellent with aged cheeses with a strong taste, where its tannic structure finds balance in the flavour of the cheese. The ideal service temperature is between 16 and 18 °C.
