The typical features of Brunello are the great intensity of its body and colour, complex and developed aromas and the predisposition for long aging. In the version “Riserva” all these qualities have the possibility to express them at high levels. This wine is the result of a careful selection that starts from the harvest, continues in the winery with the long aging in barrels and ends with a long maturation in the bottle, before the introduction in the market. It is produced with 100% Sangiovese. During the wine-making, the soft pressed grapes are cooled at 16°C in a space without CO2. This cooling-process is useful to extract from the peels polyphenols and anthocyanins. The alcoholic fermentation follows at a controlled temperature of 27°C for 16-17 days. After the malolactic fermentation the product is introduced in little containers (2.25-15 hl) and then poured in bigger ones. The prestigious Brunello rests in barrels for at least three years and ages in the bottle for minimum six months.
