With an excellent drinkability and pleasantly fruity, this red wine from Marziano Abbona comes from the most famous cru of Novello, Ravera, which produces the best Barolo wines in the area. After the harvest, we proceed with destemming and pressing followed by film maceration for 24 hours. Spontaneous alcoholic fermentation then takes place with indigenous yeasts in contact with the steel peels for 21 days. Once this phase is complete, the process proceeds with submerged cap maceration at 22°C for 60 days. After the steel malolactic process, the final aging phase takes place in a 25-hectolitre barrel for 10 months, followed by oak transfer for 50 hectolitres for another 26 months. Before being marketed, the wine rests further in the bottle for another six months.
Characteristics of this Piedmont wine
It has a ruby red color with garnet reflections, while the olfactory notes recall balsamic herbs, undergrowth and berries. On the palate we find a firm and enveloping tannic texture.
