Toscana "Excelsus" BANFI
It is an excellent wine because delicate and bodied.
The cultivation area is the normal one for the Banfi winery so the south hills of Montalcino. The soils are located at 170 meters above the sea level for the Cabernet Sauvignon and 200 meters for the Merlot grapes.
The soil of the Merlot is brown-yellow colored with sand, limestones and pebbly structure. The Cabernet soil ha a light brown olive color clay with a good presence of limestone. There are used 60% of Merlot and 40% of Cabernet grapes.
The cultivation method is the cordon spur pruning and the density is 2100 trees per hectare with a profit of 60 quintals per hectare. This wine is produced only during the best years. The two varieties are vinified separately in steel and in horizon barrels under temperature control between 8 days for the Merlot and 18 days for the Cabernet. After the alcoholic fermentation it follows the malolactic one and it follows a refinement at 15°C for 20 months. During the first 12 months the two varieties are separated but then they aere poured together and they mature for further 8 months.

It has an intense ruby red color with garnet reflections. The smell is wide and rich. The Cabernet and Merlot characteristics exalt in the aroma for a very complex wine. The taste is full and round with a light and refined wood hint.

An extremely elegant wine perfect for red meats and aged cheeses. It is perfect to be aged. The service temperature must be 16°C in wide wine glass.
