Cuvée No. 7 embodies the territorial identity and all the peculiarities of the terroir, establishing itself as the most contemporary Franciacorta from the Lo Sparviere winery: it was born in 2014 from a selection of the top 10 cuvées created using different percentages of wines from individual vineyards: since cuvée No. 7 proved to be the perfect essence of the territory, the wine took on this name. This Franciacorta is made from pure Chardonnay grapes, sourced from the Provaglio d'Iseo vineyards at 200 m above sea level: the soils are marly with a prevalence of silt and pink clay. Manual harvesting takes place between the last ten days of August and the first of September: from the vineyard, the Chardonnay boxes are placed in a refrigeration cell at a temperature of 4°C for approximately 24-36 hours; this process promotes better extraction of varietal aromas. This is followed by soft pressing of the whole bunches and slow fermentation at 16°C, to retain all the olfactory components. The base wine matures on the lees for 7 months in steel, and the foam intake draft takes place in May. Bottle aging on the lees takes 30 months.
Features of this Franciacorta Lo Sparviere
With a fine, persistent perlage, a dense foam and a straw-yellow color with golden highlights. The olfactory notes recall honey, ripe fruit, and buttery notes, as well as dried fruit and bread crust. On the palate it is fresh and mineral, with a long persistence.

Perfect with sliced and cheesy tagleri, fish, seafood risottos, and vegetable dishes. Serve at 8°C.
