Wine description

Volpe Pasini Sauvignon is made from Sauvignon Blanc grapes grown in the hills of Friuli Venezia Giulia, an area particularly suited to aromatic whites thanks to its mineral soils and cool climate with strong temperature variations. Winemaking generally takes place in stainless steel at a controlled temperature to preserve the varietal aromatic component, with aging on the yeasts for a few months that enriches their structure and complexity.

 


Characteristics of this Friulian wine

On organoleptic examination it appears with a pale straw yellow colour with greenish reflections. The bouquet is intense and typical, with marked notes of citrus, grapefruit and lime, followed by hints of tropical fruit and the classic vegetal nuances of sage, tomato leaf and aromatic herbs. On the palate it is fresh, vibrant and savoury, with a marked acidity that supports its balance and a long, clean, slightly mineral closure.

 


Recommended pairings with this white wine from Volpe Pasini

It pairs very well with seafood appetizers, shellfish, raw and grilled fish, but also with first courses with vegetables, herb risottos and light white meats. It is also particularly suitable for Asian cuisine and dishes with aromatic or slightly spicy notes, thanks to its freshness and olfactory intensity. The ideal service temperature is 8–10 °C.
