Cabernet di Volpe Pasini is obtained from Cabernet grapes grown in the hills of Friuli Venezia Giulia, particularly in the more suitable areas of the Eastern Hills, where the marl and sandstone soils and the cool climate with good temperature variations allow the grapes to mature slowly and completely. Winemaking involves fermentation in steel at a controlled temperature with maceration on the skins aimed at extracting color, structure, and aromatic components. This is followed by aging in wood, generally in medium-capacity barriques or barrels, which helps supplement the tannins and enrich the olfactory and gustatory profile.
Characteristics of this Friulian wine
On organoleptic examination, it appears with an intense and deep ruby red color, tending towards garnet with evolution. On the nose, it is complex and characterized by notes of ripe berries, blackcurrant, and blackberry, accompanied by spicy notes of black pepper, licorice, and light herbaceous nuances typical of the grape variety, as well as hints of cocoa, tobacco, and vanilla from aging in wood. On the palate it is structured, firm and enveloping, with tannins present but well integrated, a good freshness that balances the softness and a long final persistence on fruity and spicy notes.
