Red wine El Dario IGT year 2003, by Cantina Bonazzi, is an high quality wine, very similar to Amarone, which come from Veneto region. Despite it is not a DOC, its excellent qualities surprisemany connoisseurs.
It is made from 15% Corvina, 20%Sangiovese, 20% Croatina, 20% Oseleta and 25% Cabernet Sauvignon.
El Dario wine-making is one of a kind: grapes are harvested, selected and placed in boxes, then moved in a “drying room” on trellises to dry up for 120 days. Grapes get pressed then fermentation takes place in oak barrels for 36 months. At the end of all these processes El Dario is bottled and will undergo ageing for 10-12 months.
El Dario is not subjected to filtration, but it is naturally stabilized.
Characteristics of Rosso Veronese wine
It presents a red almost garnet colour.
Bouquet of plum and undergrowth with vanilla, licorice and cocoa fragrances due to the long ageing.
Full-bodied with a slightly tannic note on the mouth.
It should be served in a broad crystal glass at a temperature of 18°-20°C. One or two hours of decantation are suggested before drinking.
