From the vinification of fine and selected grapes of 100% pure Pecorino. The origin is the classic one of the heart of Abruzzo. This wine is obtained from grapes in purity of the homonymous vine, the last purchase of the family in terms of local varieties, after Montepulciano and Trebbiano. The vines from which the grapes destined for harvest come from, rest on clayey and medium-textured soil, and are cultivated following the precepts of organic and biodynamic agriculture. The work in the cellar is as artisanal as possible, the grapes are pressed with feet in a wooden tank, while the fermentation takes place spontaneously in a vitrified concrete tank. The liquid does not undergo any filtration or clarification, and refines a few months in the bottle.
Pecorino Colli Aprutini Bio Emidio Pepe’s features
An intense straw yellow colour. The scent on the nose which, depending on the bottle, may require a few more minutes of oxygenation to ensure that its aromatic range is fully relaxed. Then begins bunches of white flowers, citrus peel, mineral puffs and almond paste. An evocative and unusual profile, which conquers for its expressive modality so direct and without filters. The taste has a reactive and snappy sip, despite the wine having an extractive matter and weight, but always enlivened by a backbone made of acidity and salt.

Try it with velvety and vegetarian soups. The optimal serving temperature is 10 ° C. The alcohol content achieved is 13.5% Vol.
