Cantina Bava’s Moscato d’Asti DOCG is an aromatic white wine made exclusively from Moscato Bianco di Canelli grapes, grown in the Piedmont hills at a considerable altitude, in areas characterised by limestone soils and a cool climate with significant daily temperature variations. These environmental conditions favour the development of the aromatic compounds typical of the grape variety, in particular the terpenes responsible for the intensely fragrant bouquet. The winemaking process is designed to preserve the aromatic qualities of the fresh grapes as much as possible. After harvesting, the bunches undergo soft pressing and the free-run juice is clarified by cold settling. The must is then stored at a low temperature until fermentation, which takes place in stainless steel tanks. Alcoholic fermentation is carried out in a controlled manner and halted early by cooling once a moderate alcohol content, typical of Moscato d’Asti, is reached, thereby maintaining a high natural sugar content and low alcohol level. The wine is then stabilised and bottled under isobaric conditions to preserve its gentle natural effervescence.

From an organoleptic perspective, Moscato d’Asti has a bright straw-yellow colour, often with golden highlights and a slight liveliness due to the presence of a fine, delicate effervescence. On the nose, it has an extremely aromatic and distinctive profile, characterised by intense floral notes reminiscent of acacia, wisteria and orange blossom, accompanied by fruity hints of peach, apricot and ripe grapes, as well as honeyed and slightly citrusy nuances. On the palate, the wine is sweet yet balanced, thanks to a good acidity that counterbalances the sweetness and makes it very pleasant to drink. The low alcohol content contributes to a sensation of lightness, whilst the gentle effervescence enhances the aromatic profile and gives the finish a fragrant and lingering character.

It also pairs excellently with softer, creamier desserts, such as panna cotta and spoon desserts, as well as with fresh or lightly syruped fruit, with which it creates a pleasant balance between sweetness and freshness. In certain culinary interpretations, it can also accompany blue-veined or mature cheeses, where the contrast between the wine’s sweetness and the cheese’s savoury flavour creates an interesting and complex pairing. The ideal serving temperature is generally between 8 and 10 °C.
