This fabulous wine was the first wine of the cellar. It is still the most diffused and truly represents Monte Rossa. The blend is composed by 85% Chardonnay, 10% Pinot Noir and 5% Pinot Blanc. It is elegant and pleasant as should be a great Franciacorta. The minimum aging is 20 months in the bottle. The vineyards are located in the DOCG area of Franciacorta, between Bornato, Brescia, Cellatica, Erbusco, Monterotondo, Provaglio, Provezze, Cologne, Passirano, Adro. After a careful selection, the grapes are harvested manually and placed in wooden boxes. Each Cru is vinified separately. The fermentation is managed both in wood and in steel tanks. The aging lasts at least 24 months.
Features of this Franciacorta Brut wine
The organoleptic analysis shows a shiny straw yellow colour, with a faint and persistent perlage. Its fresh perfume recalls fruits like pear, peach, yeast and bread crust. The taste is harmonious, complex and persistent.
Recommended food pairings whila tasting this Sparkling Brut wine
It is excellent for happy hours and great with rich starters like cold cuts and cheeses. You have to try it with fish tempura. It has to be served at 6°C in a high, tapered wine glass.
