The red wine from the Caldaro Winery takes its name from the area of origin. The Schiava grape is vinified in 100% purity. The vineyards are up to 50 years old and reach a yield of 85 hectoliters per hectare of vines. The training system is the classic Trentino pergola system. For the Caldaro winery, Lake Caldaro is both a point of reference and an element of identification: first of all, there is a large part of the vineyards surrounding the lake which bears the name of the village. On the other hand, the wine produced from Schiava grapes from the vineyards surrounding the lake is also called "Lago di Caldaro". The vinification involves fermentation on the skins with maceration for a week at a controlled temperature of 24°C. Then the malolactic fermentation and aging of 4 months on the fine lees in steel tanks and in concrete barrels. The vineyard is located in a hilly area near the lake, have a southern and eastern exposure and rise to an altitude of 230 meters above sea level, reaching even 450 meters. The soil is calcareous, clayey of medium texture.
Characteristics of the Lago di Caldaro DOC wine
On the organoleptic examination this wine from Trentino has a brilliant ruby red color. The scent is fruity, of cherry and raspberry, ample and enveloping hints of bitter almond. The taste is savory and soft on the palate, easy to drink.

This sensational wine is also excellent between meals. It goes well with dishes of the typical cuisine of Trentino, cured meats and aged cheeses and meat both stewed and cooked on the grill are exceptional combinations. It should be served at 15°C in a high and wide glass.
