Even if it is produced with an international variety, this wine expresses all the elegance and the ability of its producer. It praises the IGT denomination Isola dei Nuraghi and it is produced with 100% Cabernet Sauvignon grapes. The vineyards are cultivated in Angiona, where the composition of the soil is mainly characterized by limestone and the elevation of the lands touch 300 meters above the sea level. After the manual harvest, the tradition of Binzimanna cellar wants that the bunches are put in wooden boxes. The wine making starts after a few hours. The soft pressing and the elimination of stalks are managed at 18-20°C. A continuous control of the temperature is set for the fermentation too, touching 27°C. Once the process ends, the wine is poured into tonneaux of 500l made of French oak. The aging lasts 10 months. It is a wine that improves with some years of evolution.
Features of this red wine
The colour of this wine tends to ruby red with deep violet shades. Its perfume is wide and intense, with hints that recall mature red fruits. The taste is dry, smooth, warm, elegant and persistent. The final sensations of wood are pleasant. 14% alcohol and 4,25 g/l acidity.
