Sas Piras is a red wine obtained by Cagnulari grapes. This ancient indigene variety of Sardinia is particularly linked to the local tradition, especially the rural one. The vineyards are located in Angiona, where the lands are located at 300 meters above the seal level and the composition of the soil is mainly characterized by the presence of clay. These features are perfect for the growth of these plants. After the manual harvest, the tradition of Binzimanna cellar wants that the bunches are put in wooden boxes. The wine making starts after a few hours. The soft pressing and the elimination of stalks are managed at 18-20°C. A continuous control of the temperature is set for the fermentation too, touching 27°C. Once the process ends, the wine is poured into tonneaux of 500l made of French oak. The aging lasts 10 months. It is a wine that improves with some years of evolution. It seems that this variety, mainly diffused in the area of Sassari, has been introduced by the Spaniards during their domination. The plants have been able to familiarize with the environment rapidly, for this reason, it can be considered a local variety. The bunches are medium-sized and produce grapes full of sugar, polyphenols and acids. The result is a wine with a deep red colour, a good sourness and an intense perfume of geranium.
