Descrizione vino

A refined wine, always elegant and characterized by fruity hints that recall an orchard. It praises the denomination DOC Alto Adige and it is produced with 100% Gewürztraminer. The grapes come from a unique vineyard, located near the lake of Monticolo and Cornaiano. A particular feature characterizes these plants, the fruits are touched by the so-called “Noble Mould”, that contributes to the creation of a great, sweet wine. The harvest is traditionally manual and it starts in November. After a brief maceration, the entire bunches are pressed and the lees are eliminated through natural sedimentation of the must. The fermentation is managed in small barrels made of oak and last 6 months. The aging then is developed in the same containers for others 15 months.

Shiny gold yellow colour surrounded by a scent that recalls dry fruits, mature apricot and citrus fruits that give a little bit of freshness. The taste is warm, full and sweet. Interesting persistence in the final.

 

Recommended food pairings while tasting this Passito 

It is a dessert wine that goes on well with sweets, but it is recommended with mouldy, aged and hot cheeses. It represents a unique pleasure. It should be served at 10-12°C in a high, tapered wine glass. The alcoholic strength is 11,5% Vol.
