From a blend of 50% Pinot Noir and 50% Chardonnay grapes raised under organic farming, this Alta Langa DOCG Extra Brut from Cantina Cocchi is born. The grapes come from the vineyard located in the Monforta d'Alba area, where there are special factors that give rise to high-quality bunches: white soil, calcareous and dry marly soils, western exposure, and high altitude. Following manual harvesting, the grapes are pressed and the different fractions are fermented separately, in steel. The final assembly takes into account only the best cold-fermented and decanted fractions. Final maturation takes place on the yeasts for 46 months.
Characteristics of this Alta Langa of the Cocchi Winery
It has a clear, crystalline color with greenish reflections. The olfactory bouquet is delicate and floral, with references to hawthorn, broom, acacia and grapefruit. On the palate it is fresh, clear and slightly savoury and with a finish of Mediterranean herbs.
Recommended pairings with this Piedmont wine
A perfect sparkling wine to accompany aperitifs based on cold cuts and cured meats, fish dishes but also battered vegetables. Serve at 8°C.
