This Apulian white wine from the Polvanera winery was born in the Marchesana vineyard near Goia del Colle, on ferrous soils with underlying limestone: the grapes used for the production of this wine are 100% Falanghina, which are harvested in the fourth week of September by mechanical harvest. . The bunches are then subjected to soft pressing with maceration in the press for 2/3 hours, followed by fermentation in stainless steel for 20 days at a temperature of 13 ° C. Finally, the wine rests for 3 months in stainless steel tanks with a final 2 months in the bottle.
Characteristics of this white wine
The organoleptic examination shows a straw yellow color and a very intense olfactory bouquet of peach, apricot, chamomile, sage and bergamot. On the palate the taste is fresh and savory with a persistent finish with an aftertaste of aromatic herbs.
