Dedicated to the memory of Celso Abbona, father of Marziano, who planted the vines of the Doriolo vineyard from which his grapes come, this red wine is Dogliani, symbol of the Piedmontese winery. After destemming and pressing, followed by spontaneous alcoholic fermentation using indigenous yeasts in contact with the peels, malolactic fermentation and the final aging phase in cement and clay take place until bottling. Final rest in bottle at 14°C for two months before being marketed.
Characteristics of this Dogliani
It has a red color tending towards purple, with an olfactory profile reminiscent of berries, plum and black cherry. On the palate it has a full and intense body and with a light tannin that gives a certain structure.
Recommended pairings with this Piedmont wine
Excellent with Piedmontese classics: boiled, braised, cut beef, baked shank. Also try with medium-aged cheeses. Serve at 18°C.
