This Prosecco Superiore Extra Dry by Le Manzane originates from the morainic hills located between Conegliano and Valdobbiadene. The vineyards are located at an altitude of between 100 and 300 metres above sea level, on clayey soils. Following the manual harvesting of the grapes, they are gently pressed and the must is cold decanted, followed by alcoholic fermentation at a controlled temperature of 16-18°C. This is followed by a 3-month rest on the lees and a second fermentation in an autoclave for 40 days. After a further 3-month rest on the lees, the result is a high-pressure product that also increases the sensation of creaminess on the palate. The final stage involves 30 days of bottle ageing.
Characteristics of this Prosecco Extra Dry
