This Springo Black by Le Manzane is made from pure Glera grapes. The grapes come from Collina di Rua, located in the municipality of San Pietro di Feletto: here, the soil is clayey, characterized by a steep slope and particularly mineral-rich soil. Once the harvest is complete, the must is cold-decanted at a temperature of 5-7°C and alcoholic fermentation begins. It then rests on the lees for three months and undergoes secondary fermentation in an autoclave with a further 30-day fermentation at a temperature of 14°C. After another two months on the lees, the production of this Prosecco concludes with a 20-day bottle aging period, before being released to the market.
Characteristics of this Prosecco Springo Black
It has a straw yellow color with a fine and persistent perlage. The aroma revolves around mineral notes, white flowers, and bread crust. On the palate, it is intense, with a pronounced minerality.

Excellent with fish dishes, especially shellfish and raw fish. Serve at 6-7°C.
