Cerasuolo di Vittoria DOCG
The Cerasuolo di Vittoria Classico born in the west Etna side and the grapes are picked in the second half of September. The fermentation takes place in stainless steel tanks at 24°-26°C for 10-15 days. After the malolactic fermentation in French oak barrels for 5-6 months the wine rest for further six months in bottle.
Characteristics of the Cerasuolo Di Vittoria Classico DOCG “Fondo Filara”
It has a bright cherry color with a rich and intense bouquet of cherry, berries and floral aromas. The taste is warm and balanced with velvety tannins.
Suggested pairings with this NICOSIA wine
This wine is perfect with braised meat or game, with aubergine., medium aged cheeses and the caciocavallo Ragusano DOP.
It must be served at 16-18°C in a wide wine glass. The proof is 13,5%.
