Nerello Mascalese "Bio Vegan" DOC
This complex and smelly Nerello Mascalese wine is made by the Nicosia winery thanks to the altitude of the grapes cultivation and the extraordinary richness of mineral of the Etna’s soils. There are aromatic herbs and spices together with cherry and red fruits smells and a wonderful elegance, structure and balance together with a remarkable mineral taste. The cultivation soils are sandy, mineral and they are located at 700-750 meters above the sea level. The cultivation method is the trellised with the cordon spur pruning. The manual grape harvest takes place in the second-third week of October. The maceration and the fermentation last each one 10-15 days at 24-26°C. The refinement takes place in steel and the 30% matures for 5-6 months in barrels and other 3-4 months in big barrels. There is a final maturation for 4-5 months in bottle.
Characteristics of this Nerello Mascalese DOC Sicilia
It has an intense ruby red color with purple reflections. The smell is complex and elegant with aromatic and licorice hints. The taste is warm and structured with a long balsamic end.
Suggested pairings with this Sicilian wine
It is perfect with middle aged cheeses, with flavored courses and with grilled or roasted meats. It must be served at 18°C and the proof is 13%.
