Aglianico del Vulture Superiore "DON ANSELMO" DOCG PATERNOSTER
The excellence of the house Paternoster. Dedicated to the memory of the founding grandfather, it represents the symbol, the history, the roots and the continuity of our Family in the vulture. The origin of the grapes is linked to small vineyards of the municipality of barrel, located 600 meters above sea level, very old and the yields spontaneously very low that at most reach 40 quintals per hectare. The grape variety is 100% pure Aglianico. For the vinification we start with the harvest which is done strictly by hand towards the end of October with a right degree of over-ripeness of the grapes. Then the real winemaking. Classic in red of destemmed grapes, maceration on the skins in steel for 15 days at a controlled temperature of 25º/28ºC, during which periodic pumping over and fulling. Finally, a period of aging follows, which involves the elevation in large Slavonian oak barrels for 50% and in French barriques for the remaining 50%. Finally the Bottling and subsequent final aging of 12 months.
Characteristics of Aglianico del Vulture Superiore "Don Anselmo"
The appearance shows a deep ruby red color, almost impenetrable and austere that of great wines. The nose expresses a broad and complex bouquet, characterized by unmistakable sulfur, currant, blueberry, cocoa, leather and sweet spices. The taste on the palate is warm, dry, with great structure and elegance.

A wine that can be considered as a whole meal, it goes well with rich roast meat preparations. Excellent also at the end of a meal, for conversation. It gives the best of itself in combination with grilled meat and seasoned with structured sauces with herbs. It should be served at room temperature of 18°C. The careful selection of grapes and careful vinification, make this Aglianico a wine of excellent longevity that if well preserved can reach 12/15 years of aging in bottle.
