Vermentino di Sardegna DOC Cala di Seta is born in southwest Sardinia, in the Sulcis area, from pure Vermentino grapes, grown in vineyards influenced by the proximity of the sea and a warm, breezy Mediterranean climate. The grapes are harvested at perfect aromatic ripeness and quickly delivered to the cellar to preserve their freshness. After a soft pressing, the must is unclamped and sent for alcoholic fermentation in stainless steel tanks at a controlled temperature, generally between 16 and 18°C, so as to maintain the varietal aromatic heritage intact. The wine then ages in steel on the fine lees for a variable period, with possible bâtonnage enriching its structure and flavor complexity, before bottling and a brief rest in the bottle.
Characteristics of this Vermentino of Sardinia
On organoleptic examination it appears with a bright straw yellow colour, often crossed by greenish reflections that underline its youth. On the nose it is fine and fragrant, with hints of citrus, white flowers and yellow-fleshed fruit, accompanied by light herbaceous notes and a characteristic mineral and brackish imprint, typical of Vermentini cultivated near the sea. In the mouth it is fresh, savoury and smooth, with good harmony between acidity and softness. The sip is elegant, of medium structure, with a pleasant persistence that recalls the citrus and marine notes perceived on the nose.
Recommended pairings with this white wine
As for gastronomic pairings, Cala di Seta lends itself perfectly to seafood cuisine, especially fish appetizers, raw fish, molluscs, shellfish, and delicate first courses based on fish or vegetables. It is also excellent with fresh cheeses and light preparations of Mediterranean cuisine. Thanks to its freshness and saltiness, it can also be eaten as an aperitif. The ideal service temperature is 8–10°C.
