The “Desaia” Cannonau di Sardegna DOC wine from the Cantina di Calasetta is a red wine created with the aim of immediately and authentically representing the character of Cannonau del Sulcis, one of the most unique areas of Sardinia's winemaking scene. The production follows an essential and controlled style, designed to enhance the freshness of the fruit. Cannonau grapes are harvested in the hilly vineyards of lower Sulcis, characterised by calcareous-clayey soils and a warm, breezy Mediterranean climate: these are particularly the hilly areas of lower Campidano, a south-eastern part of Sardinia. After destemming and gentle pressing, the must ferments in steel at a controlled temperature with a maceration on the skins of approximately 10–12 days, a fundamental step in extracting color, aromas and a balanced tannic structure. Once fermentation is complete, the wine ages in steel for a few months, followed by a brief bottle pass, thus maintaining its varietal imprint and expressive immediacy intact.

On organoleptic examination it appears with a pale and bright ruby red colour. On the nose it offers an intense yet delicate profile, with evident notes of fresh red fruit, especially cherry and small berries, accompanied by floral nuances and light herbaceous sensations typical of the grape variety. In the mouth it is dry, of medium structure, with a good freshness that supports drinking and soft and well-integrated tannins. The balance between acidity and fruity component makes it smooth and harmonious, with a pleasant and clean taste persistence that recalls the fruit and a slight spicy note on the finish.

As for pairings, Desaia is a very versatile wine that lends itself to everyday cooking. It pairs well with first courses with meat sauces, light ragù pastas, tasty soups and soups, but also with white meats, poultry and not too structured red meats. Also interesting with pizzas, calzones and rustic dishes, thanks to its drinkability and freshness. The ideal serving temperature is around 16 °C, slightly cool to enhance its fruity component and maintain its taste agility. It is advisable to open it a few minutes before consumption to allow a better aromatic expression.
