This prestigious and famous blend is composed by 60% Corvina, 15% Corvinone, 15% Rondinella and 10% of other grapes. The vineyards are located in the traditional area of Valpolicella, in Moron, on the hills of Negrar. The harvest is planned in the last week of September and it is managed manually. The wine-making considers a drying process that lasts 130 days. Then, the stalks are eliminated and the pressing starts. The fermentation temperature is set on 12-23°C and the maceration lasts 20 days. It completes the malolactic fermentation and it ages for 6 months in barriques made of Allier oak. It continues the maturation in the bottle for other 4 months. Natural stabilisation.
