This prestigious and sweet blend is composed by 60% Corvina, 15% Corvinone, 15% Rondinella and 10% of other grapes. The vineyards are located in the traditional area of Valpolicella. The harvest is planned in the last week of September and it is managed manually. The wine-making considers a drying process that lasts 120 days. Then, in February, the stalks are eliminated and the pressing starts. The fermentation temperature is set on 20°C and the maceration is managed in small inox tanks. The fermentation is developed in barrels made with different woods, like cherry. 48 months aging in wood and 6 months in the bottle. Natural stabilization.
Features of the wine
Intense garnet red colour, enriched by complex, fruity scents that recall cherry. The taste is sweet.
Recommended food pairings
It is excellent with extra dark chocolate, but it represents the perfect meditation wine for cigars lovers. It has to be served at 12°C in a wide wine glass that helps oxygenation. 17% Vol.
