This Prosecco Millesimato DOC Extra Dry from Cantina Bosco del Merlo is made from pure Glera grapes from the historic production area,with a particularly suitable microclimate and soil rich in minerals and microelements. The grapes are hand-picked during the early hours of the day, during the second ten days of September: once brought to the cellar, the bunches are subjected to white winemaking, with soft pressing of the grapes, in such a way as to extract only the flowering must. After static decantation, fermentation follows at a controlled temperature of 14-16°C. Before the second fermentation, 10% of Glera must is added: the foam intake takes place in an autoclave, as is standard practice for prosecco, for 2 months.
Features of this Prosecco Millesimato DOC Extra Dry
It has a bright straw yellow colour with greenish reflections and a fine, noble and persistent perlage. The olfactory notes are delicate, fruity and fragrant: pear, green apple but also floral hints of acacia. On the palate it is characterised by an accentuated flavour and a surprising minerality.
Recommended pairings with this Millesimato
Perfect as an aperitif, in convivial moments between friends. Try fish dishes like clam paste, fried foods, and grilled fish. Also excellent with white meats. Serve at 6°C.
