From the bunches cultivated of the Prosecco it is produced the basis wine lately submit to the re-fermentation. The use of selected yeasts, the slow re-fermentation time for at least three weeks, the temperature control at 15°-18°C, the long resting period on yeasts for one month and the isobaric bottling permit to keep the freshness and the aromas during the time.
The vineyards are cultivated on the Treviso province hills in the core of the DOC area, at 250 meters above the sea level.
The soil is moraine, perfectly exposed, with 4000 units of Glera per hectare which are picked in September. The wine has a proof of 11%.
Characteristics of this Prosecco Santa Margherita
The Prosecco Extra Dry DOC Santa Margherita has a bright straw yellow color and a fine and persistent perlage. The smell is delicate with floral and fruity aromas of pear and peach.
The taste is full and elegant with a stimulating freshness which exalt the rich aroma.
