Franciacorta VINTAGE COLLECTION EXTRA BRUT Ca del Bosco
The denomination for this sensational Franciacorta Millesimato DOCG is the one that guarantees its origin, the highest honor in oenological terms. The grape variety used in the blend is mainly that of Chardonnay for 55%, to which is added Pinot Bianco for 15%, and Pinot Nero for 30%. The origin of the 16 Chardonnay vineyards, with an average age of 34, is located in the municipalities of Erbusco, Adro, Cazzago San Martino, Corte Franca and Passirano. The 2 Pinot Bianco vineyards, with an average age of 26 years, located in Passirano. And the 10 Pinot Nero vineyards, with an average age of 24, are located in the municipalities of Erbusco and Passirano. The vinification of the Franciacorta Vintage Collection is the result of a careful selection of the grapes and a skilful vinification conducted in full compliance with the Cà del Bosco Method. The grapes, freshly picked by hand in small boxes, are classified and cooled. Each bunch is selected by expert eyes and hands, to then benefit from the exclusive "terme degli acini". A particular system of washing and hydromassage of the bunches, through three soaking tanks and a drying tunnel. After pressing in the absence of oxygen, all the musts of the base wines ferment in small oak barrels. To seek the maximum aromatic complexity and expressive power, without losing elegance, the barrel elevation lasts only 5 months. A pair of floating tanks allows the decanting of wines by gravity, from small barrels to aging tanks. After 7 months from the harvest, the cuvée is created. The Vintage Collection Brut 2013 is the result of a skilful combination of 28 base wines of Chardonnay, Pinot Bianco and Pinot Noir that give the finished product a particular, rich and complex profile. The greater percentage of Pinot Noir gives it power and nobility, further emphasized by a long refinement in the bottle. The dégorgement takes place in the absence of oxygen, using a unique system in the world, designed and patented by Ca 'del Bosco. This avoids oxidative shocks and further additions of solvents, making our Franciacortas purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked, to guarantee its traceability.
