A red elegant and bodied wine of the Zenato winery made with 50% Merlot and 50% Corvina grapes both coming from the Valpolicella. The soils are located at 100-250 meters above the sea level with a clay and limestone soil with stones. The Merlot is cultivated with the cordon spur pruning while the Corvina with the Guyot method with a density of 5000 trees per hectare. The vineyards are 20 years old with a profit of 90 quintals. The grape harvest takes place between September and October and there is a manual picking. There is the maceration of the peels for 12/15 days and once ended the alcoholic fermentation there is the racking off and the pressing. There is the malolactic fermentation in tonneaux of 500 liters and in big barrels for 12 months. There is a bottle refinement for few months in bottle.
