Catarratto Sicilia DOC BIO from Baglio di Pianetto is obtained from pure Catarratto grapes grown organically in the vineyards of Santa Cristina Gela, at approximately 750 metres above sea level. The soils, rich in clay, silt, sand and minerals, favor the aromatic complexity of the wine. The harvest is carried out manually at multiple harvest times to obtain different ripening expressions. After soft pressing, the must ferments in steel at a controlled temperature and the wine ages on the yeasts for about three months, followed by aging in the bottle.
Characteristics of this Sicilian wine
It has an intense straw yellow colour, sometimes with greenish reflections. Citrus and floral scents emerge on the nose, with notes of lemon, zagara, jasmine, white peach, pear and light herbaceous and mineral nuances. In the mouth it is fresh, dry and savoury, supported by good acidity and a marked minerality that accompanies the sip towards a long, balanced and persistent finish.
Recommended pairings with this Sicilian white wine
This organic Catarratto pairs perfectly with fish, shellfish, shellfish and seafood dishes. It is also ideal with Mediterranean appetizers, sushi, grilled vegetables, white meats and fresh or goat cheeses. Thanks to its freshness and flavour, it is also excellent as an aperitif wine. Serve at a temperature of 10-12°C.
