This white wine from Puglia is born from a blend of Chardonnay, Fiano and Verdeca grapes from the Salento vineyards, located at 80 m above sea level and on clay-sandy soils. The harvest takes place in the third ten days of August for Chardonnay and in the third ten days of September for Fiano and Verdeca: after harvesting the bunches, the winemaking process proceeds separately. After soft pressing, the grapes are harvested and vinified separately: they are subjected to preferential cryomaceration for approximately 6 hours at 10 °C; Verdeca is vinified in white, Fiano with a 4-hour maceration and Chardonnay with a 12-hour maceration. Next, the cleaned musts ferment at 14 °C for about 20 days, each grape with its own yeasts. Chardonnay ferments 60% in steel and 40% in barriques, then stored in wood for 6 months where it carries out malolactic fermentation. Verdeca and Fiano ferment in steel and once the aging period is over, the wine is assembled and bottled.
Characteristics of this white wine from Puglia
It strikes with a bright gold color with greenish reflections. The olfactory notes recall honey and banana but also spices, bergamot and sage.

Excellent in combination with fish abse or white meat dishes. Serve at 10°C.
