The Barbaresco “Rio Sordo” DOCG – Cascina Bruciata is a Piedmontese red wine of great finesse, produced exclusively from 100% Nebbiolo grapes sourced from the Rio Sordo cru, situated in the municipality of Barbaresco, one of the most prestigious areas within the appellation. The area is characterised by soils of marine origin, rich in compact, stratified calcareous marl, elements that contribute to giving the wine structure, depth and a marked mineral character. Vinification follows a traditional approach that respects the grape variety. The grapes are harvested by hand and undergo alcoholic fermentation in stainless steel tanks, during which maceration on the skins takes place for around a month – a process essential for the extraction of colour, tannins and aromatic complexity. The wine then completes malolactic fermentation and is transferred to large, untosted oak barrels, where it ages for around 20–22 months, acquiring balance and finesse without being overly influenced by the wood.
Characteristics of this Piedmont wine
From an organoleptic perspective, Barbaresco Rio Sordo presents a bright, transparent garnet-red colour. On the nose, it displays great complexity, with distinct aromas of red and dark fruits, floral notes of wilted rose and violet, and spicy undertones reminiscent of sweet pepper, tobacco and undergrowth. On the palate, it is an elegant yet austere wine, characterised by a substantial structure and dense, well-defined tannins, which lend depth and ageing potential. The sustained acidity extends its finish, making the mouthfeel harmonious and very long.
Recommended pairings with this red wine from Cascina Bruciata
In terms of pairings, this wine is at its best with dishes of a certain complexity and intensity of flavour, where the protein and fat content of the dish helps to soften the tannic structure and enhance its aromatic finesse. It is particularly well-suited to substantial red meats, whether roasted or stewed, and to game dishes, where the wine’s structure finds a perfect match. Mature cheeses also make a harmonious pairing, thanks to the contrast between the savoury notes of the cheese and the wine’s tannic and acidic components, which help to cleanse the palate and maintain a balance of flavours. Serve at 18°C.
