Vivo is made from 100% Nebbiolo grapes. It is a wine that is ready to drink but at the same time has great potential for ageing. This reinterpretation of Sforzato di Valtellina is made from Nebbiolo grapes that are harvested by hand, carefully selected and then left to dry. Vinification takes place through infusion maceration: colour, aromas and tannins are thus extracted delicately, preserving all the unique characteristics of the grapes. Fermentation takes place in 500-litre tonneaux, and the process is then completed with one year of ageing in wood.
Characteristics of this Plozza wine
It has a dark ruby colour and a deep bouquet, with notes of red fruit, balsamic and spicy aromas. On the palate, it is enveloping, with a dense and consistent tannic texture.
Recommended pairings with this red wine
Perfect with red meat and game dishes such as stews and braised meats accompanied by polenta, but also with very mature cheeses. Serve at a temperature of 16-18°C.
