This prestigious and famous blend is composed by 60% Corvina, 15% Corvinone, 15% Rondinella and 10% of other grapes. The vineyards are located in the traditional area of Valpolicella, in Moron, on the hills of Negrar. The harvest is planned in the last week of September and it is managed manually. The wine-making considers a drying process that lasts 130 days. Then, the stalks are eliminated and the pressing starts. The fermentation temperature is set on 12-23°C and the maceration lasts 20 days. It completes the malolactic fermentation and it ages for 6 months in barriques made of Allier oak. It continues the maturation in the bottle for other 4 months. Natural stabilisation.

Intense ruby red colour, enriched by complex, fruity scents that are surrounded by flowers and spices. The taste is full, intense and enchanting.

It is excellent with sweets, chocolate, mouldy and spicy cheeses. It has to be served at 10°C in a small but wide wine glass.
