The Astoria winery, one of the most renowned in the Prosecco scene, produces this sensational Prosecco DOC Treviso Bio for which uses only 100% pure Glera grapes. The origin is that of the most valuable vineyards of the hilly area of Treviso conducted strictly under organic viticulture by the technicians Astoria. The harvest takes place manually in September and follows with the vinification and the soft pressing and the static decantation of the must. The primary fermentation takes place in steel at 18 º C with yeasts selected for the production of organic wine.The new wine is kept on the "noble lees" for a month, then filtered and decanted in autoclaves for the foam. The refermentation takes place at 18 C always with selected yeasts and lasts about 15/20 days; followed by 5/10 days of aging on the yeasts. Then proceed to the bottling and rest in the bottle for a few weeks.
