Made with 100% Pecorino grapes, this Brut Abruzzo sparkling wine is part of the Premium Line of Tenuta Ulisse Winery. The vinification requires careful sorting of the whole grapes in the appropriate cooling tunnel with subsequent reduction of temperature: it follows the skin cryomacerazione in order to obtain the extraction of aromatic compounds. Fermentation takes place at a controlled temperature of 11 ºC in thermoregulated casks. The sparkling process takes place in an autoclave: the must stored in refrigerated tanks is placed in an autoclave where it is foamed by the Charmat method. Aging takes place in bottle for at least 3 months.
Characteristics of this sparkling wine from Abruzzo
It has a straw yellow color and a fine and continuous perlage. Very intense are the aromatic notes of tropical fruit that then return to the palto.
