Amarone della Valpolicella "RHETICO" Bolla
This is the symbolic wine of the Bolla winery from Veneto. This is made by 70% of Corvina and Corvinone grapes and 30% of other local vines. In every passage of the manual harvest are selected the 10-15% of the ripen bunches. The wither step occurs at 450 meters above the sea level in the Torbe di Negrar hamlet. During the pressing the grapes achieve a sugar concentration of 22,5 and 24,4 grams per liter. The Amarone Bolla is produced in the Classic area. During the vegetative phase there are removed the weak buds and the bunches are deprived of some basic leaves. The wine making process starts in January when the withered grapes are ready. The fermentation temperature and the maceration period are carefully checked to obtain wonderful tannins. The profit is the 40%. There is a long maceration for 36 months in oak barrels. And part of the wine refines for 18 months in French oak barrels. It follows the 2 months aging in bottle.
Characteristics of this Amarone
It has a dark ruby red color with garnet reflections. It has some jam, raising grapes, spices and balsamic aromas. The taste is rich with fruity hints. The elegant toasted almond aftertaste close the taste with a long and far remind.
Suggested pairings with this Amarone Rhetico
This wine has to be drunk alone in front of the chimney. It is also good with roasted meats or game but also with aged cheeses not spicy. It must be serve at 18°C in a Ballon wine glass and the proof is 15,8%.
