Prosecco Superiore Brut DOCG Col Vetoraz
A “Prosecco Valdobbiadene” of the winery Col Vetoraz that belongs to the category of Brut. The grapes come only and exclusively from the high hills displayed on the west side, where the aging is perfect for the production of this sparkling wine. The single-variety winemaking of “Glera” is made with grapes coming from the territory of the property Col Vetoraz. Grape harvest is from 10 of September till 20 of October. The vinification starts with soft press and goes on with “Metodo Martinotti”, in autoclave. The vinification in white is developped with soft pressing. The primary and temperature controlled fermentation with static decanting requires a period fot foam creation between 13 and 40 days. Aging in steel, 1-3 months.
Features of Prosecco Superiore DOCG Brut
If we analyse the organoleptic aspect, the perlage is refined and persistent. The colour is a light straw yellow with amber shades. The scent recalls floral marks, typical of rose, but also citrus fruits, acacia, white peach, pear and apple. The taste is dry and sapid.
