This Pecorino from Cantina Belisario comes from the Abruzzo vineyards of Rocca San Giovanni: the hillside vineyards are located at an altitude of between 200 and 250 metres above sea level, facing south; the harvest takes place according to the ripening curves of sugars, acidity and pH, followed by white vinification at a controlled temperature and soft pressing, fermentation at a temperature of 16-18°C for about twenty days and finally maturation in steel for a period of 5 months.
Characteristics of this Pecorino wine
It has a very intense straw yellow colour with golden reflections. The bouquet is reminiscent of lemon zest, apple and pear; on the palate it is quite structured and well balanced.
Recommended pairings with this Belisario white wine
Perfect with fish dishes: starters, steamed fish, seafood salads, carpaccio, seafood risotto. Also worth trying with white meats. Serve at a temperature of 8-10°C.
