This prestigious wine of the Nicosia winery is made by 100% Grillo grapes. It has an intense straw yellow color with fragrant fruity aromas of the Mediterranean Sea such as mint and nettle. The taste is fresh, full, with salty aroma and a good persistence. The cultivation soils are clay with the guyot method. The manual picking takes place in September. The cold maceration for 12 hours before being softly pressed. It follows the fermentation for 48 hours of decantation and it ferments for 20-25 days at 15-18°C. Finally, it takes place the refinement on peels in stainless steel tanks and a permanence in bottle of 2-3 months.
