This wine is made by 100% Chardonnay grapes. The soil is moraine and there is the manual grape harvest and the grapes are put in 14 kg boxes. The most beautiful grapes of the most ancient vines arrive in the cellar maximum 2 hour later for the soft pressing with a static decantation for 18-24 hours with a fermentation under temperature control with selected yeasts. Part of the must ends the fermentation in wood barrels for 8 months. During spring time the wines are assembled and it starts a light clarification and filtration of the wines with a cold maceration. The permanence on the yeasts lasts 45 months and it permits the franciacorta Extra Brut of the San Pietro farm to become a real complex wine. The sugar corresponds to 4 grams per liter.
Characteristics of the Franciacorta wine
It has a shiny and intense straw yellow color. The smell has intense almond and honey aromas with a wide and fragrant structure. The taste is lively, full, elegant, long and refined in the end.

It is perfect as appetizer, with fish and crustacean in particular. It must be served at 8°C in high and tapered wine glasses.
