A Champagne resulting from vinification in a blend of 70% Pinot Noir grapes and 30% Chardonnay. The vinification involves the use of the method studied by the cellar chef, which consists in operating a double fermentation of the must at a controlled temperature and with the second fermentation in the bottle. Aging on the yeasts is more than three times that allowed by the 15-month disciplinary, this is to give the wines greater complexity. Aging ranges from 3 to 4 years. The finesse of the perlage of our Cuvées is given by this long aging, by a noble raw material and by a perfectly controlled, fresh and constant cellar temperature.

 

Characteristics of this Champagne Extra Brut

The organoleptic test shows a light gold color with a lively perlage rich in fine and persistent bubbles. The scent is rich in aromas that at the first hint reveal the citrus fruits of grapefruit, lemon and then the aromas of fruit such as peach, pear and apple are perceived. The attack taste is lively, thanks to the low dosage that allows you to respect the authenticity of the wine. Wide, long mouth that leaves a very clear finish.
