The icon wine of the Santi winery is produced only in the best vintages. The vines used for its vinification are those of Corvina for 50%, of Corvinone for 30%, and of Rondinella for 20%. The origin of the grapes for the production of Amarone della Valpolicella Classico DOCG "Proemio" is linked to vineyards located in the municipalities of San Pietro in Cariano, Marano and Fumane, near Verona. This wine is produced with grapes harvested exclusively by hand, refines in barriques for about 24 months and then for a further 12 months in the bottle before being marketed.
