This sensational label by Umani Ronchi is produced with 100% Verdicchio grapes, cultivated in the DOC area Castelli di Jesi. The plants are between 8-30 years old, they are trained with Guyot method and their elevation swings between 200-350 meters above the sea level. The deep lands are composed mainly by clay and limestone. 70 quintals per hectare. The manual harvest is planned in the second half of September. After the soft pressing, the juice is subjected to static decanting. Since a few years, part of the grapes dedicated to Casal di Serra are vinified with maceration on skins, that helps and increases the extraction of the organoleptic features of the variety. The fermentation is managed at 16-18°C for 10-15 days. 5 months aging on lees in inox and further maturation in the bottle.
Features of the Verdicchio "Casaldiserra" DOC wine from Marche
Straw yellow colour with some gold shades. Its perfume recalls wild flowers and fruits like peach, apple and loquat. The taste is rich and silky, fresh, savoury and soft. Dry, fruity and persistent final.
