One of the most prestigious wines of Cantina Letrari, located in Vallagarina, Trentino Alto Adige, an area particularly dedicated to the production of bubbles. Founded in 1976 by Leonello Letrari and his wife Vittoria, Cantina Letrari produces wines of undoubted quality, wisely combining tradition and innovation. Thanks to the influence of the Ora del Garda, which blows on the Adige creating a peculiar Mediterranean climate, the Letrari farm with its 23 hectares of vineyards produces wines with an enviable structure and flavor: Among these there is the Trento DOC Riserva del Fondatore 976, a vintage sparkling wine made from Chardonnay and Pinot Noir grapes harvested exclusively by hand only in the best vintages and from the best vineyards of the company. After the harvest the wine is fermented in the bottle according to the classic method. Afterwards, it is left on the lees for at least 96 months, with fractional disgorgement.

It’s a sparkling wine ready to drink, but also suitable to stay in the cellar for 4/5 years. It surprises for its structure and elegance and has a bright and lively golden color. On the nose, the aroma alternates salty notes of bread crust with sweet notes of aromatic herbs and dried fruit. In the mouth the taste is rich, full and creamy, with a persistent and mineral finish and a slight spicy aftertaste.

Recommended pairings with this sparkling Letrari

The freshness and creaminess of this wine make it suitable for the whole meal, with an eye to all fish dishes, also structured: oysters, grilled and fried fish, tartare, but also Sushi and Sashimi. Serve at a temperature of 6/8 degrees, in a tall and tapered glass.
