For the creation of this Franciacorta are used Chardonnay 75%, Pinot Nero 15% and Pinot Bianco 10%. The vinification takes place through a soft pressing and after the phase of decantation the selected yeasts are added. The fermentation in stainless steel has a duration of 20 days. The long aging of 7 months takes place partly in steel and partly in barrique. In the following month of May the sparkling wine is bottled and closed with crown corks for refermentation and left to age in bottle on the lees for 20 to 26 months. The last stage of processing involves disgorging which consists in removing the cap on which the lees have deposited.
