From the 100% vinification of Nero di Troia grapes, the Apulian wine cellar, in the central area of the heel of Italy, Ognissole produces a sensational red wine. Romanico DOP, able to boast the denomination Castel del Monte Rosso Protected Designation of Origin. The area of production of the vineyard, is the one that falls behind the hills of the high Murgia at an altitude of about 250 meters above sea level; in the agricultural area of Canosa di Puglia. The soil is calcareous, slightly clayey, pebble and basically dry. The vinification involves a careful selection of the grapes in the vineyard, followed by a manual harvest, and the vinification with native yeasts and with long contact of the must with the pressed and de-stemmed grapes in order to transfer the color intensely as well as tannins. Finally, the aging develops in steel containers and then in French oak barrels of 25 hectoliters.

The aspect that emerges from the organoleptic analysis, this wine has an intense ruby color with orange reflections, the scent has strong sensations accentuated with aromas of dried fruits, spices, licorice, of great elegance and finesse. The taste is dry, well balanced, and especially persistent.
